Zucchini Pie (Mock Apple)

7½ - 8 C zucchini—peeled, seeded and cut into small slices.


Cover with water and cook until tender, drain and pour cold water over and let stand for 5 minutes.  Drain off water, very, very, very well.


Add: 2½ C sugar

3 tsp cinnamon

3 tsp cream of tartar

4 tsp lemon juice

4 Tbsp flour

Dash salt

Dash nutmeg


Mix and put into an unbaked pie shell.  Dot with butter.

Top with crust (or use Dutch apple topping)

Bake at 400° for 40-45 minutes.
