Zucchini Bread

Puree in a Blender:

2 C chopped peeled zucchini                

1 C vegetable oil

 

Mix together:

2 Eggs

2 C sugar

3 tsp vanilla

3 C flour

1 tsp baking soda

1 tsp salt

1/4 tsp baking powder 

3 tsp cinnamon

 

Add puree to dry mixture, mix until well blended, add:

1 C chopped walnuts (optional)

 

Pour into 2 greased loaf pans.

Bake at 350 degrees for 1 hour.
