Zucchini Bars

4 eggs                                          

2 C sugar                                    

1½ C vegetable oil                     

2 C flour                                     

2 tsp baking soda

2 tsp cinnamon

1 tsp salt

1½ Coconut (optional)

1 C raisins (optional)

3 C shredded zucchini 

1 C chopped walnuts


In a large bowl beat eggs, sugar, oil, flour, soda, cinnamon and salt until well blended.  By hand mix in all remaining ingredients.

Spread into two 9x13 greased and floured pans or one extra large cookie sheet.  Bake at 350° for 25 minutes. Cool before adding frosting.


Cream Cheese Frosting: 

Beat until Smooth:

8 oz cream cheese

1/2 C butter

1 tsp vanilla

1 lb (4 C) powdered sugar
