White Fruit Cake

1 C Butter

2 C Sugar

6 eggs

1 tsp baking powder

1/2 tsp salt

1 tsp dried orange peel

1 tsp dried lemon peel

3 C flour

1 C golden raisins

1 C dried pineapple, chopped

2 C chopped pecans


Grease 2 standard loaf pans (Line with parchment if desired) or 6-8 small ones.

In a large bowl mix ingredients in the order given.  Divide evenly into loaf pans.

Placed a pan of water on the first shelf of the oven and bake the loaves on the upper shelf of a 300° oven for 1-1½ hours intil a pick inserted comes out clean.   (The bigger the pan the longer it will take)


After the loaves cool brush the tops with quality rum.  No need to soak them.
