Tempura Batter

1 1/8 C flour

2 Tbsp Corn Starch

1 tsp salt

1 tsp baking powder

2/3 C cold water

1 egg 

1/4 C salad oil


Mix dry ingredients together in a wide bowl.

Whisk water egg and oil until smooth.

Add wet ingredients to dry ingredients whisking until smooth.  Batter should be thick but not pasty.  Water may need to be added until batter is consistency you like.


Fry foods in 3-5 inches of 350º oil until golden brown.  Most foods require turning once.  Drain on fry rack for a few minutes or set on paper towels.

Fish fillets

Prawns

clams

Asparagus

Onion Rings

Eggplant

zucchini

Sweet potatoes

Pepper rings
