Taco Stuffed Pasta Shells

1¼ lb ground beef or turkey                    

4 oz cream cheese                                

1 tsp chives                                         

1 tsp salt 1½ C crushed tortilla chips

1 tsp chili powder

24-36 Jumbo pasta shells

2 tbsp butter

1½ C Medium Salsa

1 C shredded cheddar cheese

1 C shredded Monterey Jack Cheese

1 C sour Cream

3 green onions chopped, with tops


Cook meat in a large skillet until brown, drain and rinse.  Add cream cheese, chives, salt and chili powder.  Simmer for 5 minutes.

Boil and drain pasta shells then toss in melted butter and fill with meat mixture.

Arrange shells in a 9x13 pan.  Pour Salsa over each shell and cover pan with foil.  Bake in a 350 degree oven for 20 minutes.

Uncover, top with chips and cheeses.  Bake 15 minutes more.

Top each shell with a dollop of sour cream and green onions.
