Pumpkin Pie

 

2C cooked pureed pumpkin meat        

1/2 C Sugar   

1/4 tsp salt    

1/2 tsp ground ginger                                        

1/4 tsp ground nutmeg

1 tsp ground cinnamon

1/4 tsp ground cloves

2 eggs, slightly beaten                                

2/3 C milk                                                

1/2 C evaporated milk  

1 -  9" unbaked pie shell

 

To cook fresh pumpkin:  Cut in half, scoop the seeds out and place cut side down on a baking sheet with sides.  Bake at 300 degrees for 1-3 hours (depending on size) until you can stick a fork in the meat easily.  Allow to drain as they cool.  When cool enough to touch scoop the meat into a food processor  or blender and process until smooth.

 

To Make Pie:  Combine pumpkin, sugar, salt and spices.  Blend in eggs, milk and evaporated milk.  (Over-beating eggs will cause the pie to have a foamy skin on top.)  Pour into pie shell.  Bake in a 400 degree oven for 50 minutes or until a knife inserted halfway between the center and the edge comes out clean.  Cool.
