Pumpkin Bowl Soup
2 "Small Sugar" Pie Pumpkins, approximately 6" diameter
1 Box Pacific Brand Cream of Chicken Soup
½ C uncooked long grain or Jasmin Rice (Wild Rice blend may be substituted)
Cut top off pumpkin and scoop the seed cavity clean.
Mix Soup with the amount of water called for on the box. Stir in rice and pour evenly into pumpkins. Place pumpkins on a baking sheet and bake at 350ºF for 1 - 1½ hours or until the pumpkin meat is soft.
Serve one pumpkin to each person and instruct them to pull pieces of the pumpkin into the soup with the spoon as they eat it.
