Potato Salad

 

12 good sized potatoes             

4-6 stalks celery                                  

12 hard boiled eggs                           

1 large onion       

1-2 C mayonnaise

1/2 tsp mustard

1 tsp salt

1/2 tsp pepper


Peel potatoes and cut into 1/2 inch cubes.  In a large pot cover with water and boil until tender, but not mushy.  Drain in a colander and rinse with cold water to stop the cooking.

Chop celery, eggs and onion into small pieces.

Mix all ingredients' together until creamy. (Hint: use a garbage bag)

Remember that salt and pepper are to taste and only use as much mayonnaise as is needed.
