Perfect Corn Bread

1 C flour 

 1 C yellow corn meal

1/4 C sugar 

4 tsp baking powder 

3/4 tsp salt 

2 eggs

1 C milk

1/4 C melted butter

 

Mix dry ingredients together in a large bowl.

Add eggs, milk and melted butter.

Beat just until smooth.

Pour into a greased 9x9x2 pan or a cast iron skillet.

Bale at 400 degrees for 20-25 minutes.

 

Corn Sticks: Spoon batter into greased corn stick pans filling 2/3 full. Bake at 400 for 12-15 minutes.

 

Variation: Substitute 1/2 C whole wheat flour for 1/2 C of the corn meal.
