Old Fashioned Apple Butter
10-12 lbs apples (Some should be tart varieties)
1 Gallon Sweet Cider
6 C sugar
3 Tsp Cinnamon
1 tsp ground cloves
Quarter apples (remove seeds if desired)(do not peel)
Boil apples in about half of the cider until tender. Discard this portion of the cider.
Press cooked apples through a sieve or food mill.
Cook pulp until it thickens. I recommend using a crock pot, start on high.
Add sugar and spices and as much of the remaining cider as the pan will hold. (Add cider gradually as it cooks down.)
Lower heat to low and cook slowly stirring frequently until apple butter will mound on a spoon. This process quite often takes over night so you may need to put crock pot on keep warm while you sleep.
Pour hot into canning jars and process for 10 minutes in a simmering water bath.
