Oatmeal Scotchies

1 3/4 C un-sifted flour                       

1 tsp baking soda                               

1/2 tsp salt                                            

1/2 tsp cinnamon

1 C Crisco (don’t sub margarine or butter)

3/4 C granulated sugar

3/4 C packed brown sugar

2 eggs

1 tsp vanilla extract

3 C quick cooking oats (or chop rolled oats for a few seconds in a food processor)

1 12oz pkg butterscotch morsels


Cream Crisco, sugars, eggs and vanilla in a large mixer bowl until light and fluffy.  Add baking soda, salt, cinnamon then flour.

By hand stir in oats and butterscotch morsels.

Dough should be almost crumbly, yet still stick together in clumps.

Drop by rounded teaspoonfuls onto un-greased cookie sheet.

Bake in a 350° oven for 8-10 minutes.
