Mocking Bird Cake

2 1/2 C sugar 

1 C butter 

4 eggs 

2 C mashed bananas 

1-15oz can crushed pineapple, drained

1 C chopped dates

1 tsp vanilla 

1 C sour cream

4 C flour

2 tsp baking powder

2 tsp baking soda

1/2 tsp cinnamon

1 1/3 C chopped walnuts

Cream butter, shortening and sugar until light and fluffy. Beat in eggs, banana's, pineapple and vanilla. Fold in sour cream. Sift flour, baking powder, baking soda and cinnamon together. Stir dry ingredients into moist just until moistened. Stir in dates and nuts. Pour into greased double size jelly-roll pan. Bake at 350 degrees for 35-40 minutes. Cool in pan for 10 minutes. Frost with cream cheese frosting.


Note: if you don't have a double size jelly-roll pan cut recipe in half and use a standard jelly roll.

Note: this cake can be baked in a bundt style pan but it will change the baking time to 45-60 minutes.
