German Sweet Chocolate Pie

24 Chocolate Sandwich Cookies, crushed

1/4 C butter, melted

1 pkg (4 oz) German's Sweet Baking Chocolate

1/3 C milk

4 oz Cream Cheese

2 Tbsp Sugar

1 1/2 C heavy whipping cream

1 C confectioners sugar

Crush chocolate sandwich cookies a food processor until no large pieces remain.  Add butter and press into pie plate.  Use either parchment or wax paper, or a smaller pie plate, to press crumbs firmly and evenly.

Microwave Chocolate and 2 Tbsp of the milk in a small bowl on high for 1½ - 2 minutes, stirring halfway through heating time.  Stir until completely melted.

Beat Cream cheese with granulated sugar and remaining milk until smooth.  Add chocolate and set aside.

Using the whisk attachment in large mixer bowl; beat heavy cream with confectioners sugar until stiff peaks form.  While still beating add chocolate mixture. Do not over beat.  Spoon mixture into pie shell and Freeze until firm, about 4 hours.  

This pie can be too hard to cut, allow to thaw at room temperature for up to 20 minutes. Or in the refrigerator for 1 hour.
