Funnel Cakes

2 beaten eggs                            

1½ C milk                                  

2 C flour                                     

1 tsp baking powder

1/2 tsp salt

 2 C cooking oil

 

In a large batter bowl, combine eggs and milk.  Stir together flour, baking powder and salt.  Add to egg mixture, beat smooth.  Test mixture to see if it flows easily through a funnel with a 1/2 inch opening.  If it is too thick, add milk, if it is too thin, add flour.

In an 8 inch skillet heat oil to 360°.

Covering the bottom of the funnel with your finger, fill with a generous 1/2 C batter.  Remove finger and release batter into hot oil in an overlapping spiral shape.  Fry until golden, about 3 minutes.  Using a wide spatula or tongs, carefully turn cake over and cook for 1 minute more.  Drain on paper towels.  Sprinkle with powdered sugar.

Serve hot.  Top with maple syrup, strawberries whipped cream or anything else you can dream up.
