English Muffin in a Loaf

2 pkgs (5 tsp) dry yeast 

6 C un-sifted flour 

1 Tbsp sugar 

2 tsp salt 

2 C milk

1/4 tsp baking soda

1/2 C water

corn meal


Combine 3 C flour, yeast, sugar, salt and soda. Heat liquids until very warm (120-130 degrees) Add to dry mixture; beat well. Stir in the rest of the flour to make a stiff batter. Spoon into two 8½x4½ inch loaf pans that have been greased and dusted with corn meal.

Cover and let rise in a warm place for 45 minutes.

Bake at 400 degrees for 25 minutes.

Remove from pans immediately and cool

To serve: Slice and toast.
