Dill Pickle Relish

 

6 C Cucumbers, chopped                            

2 C red bell pepper, chopped                

2 C onion, chopped                               

1 C celery chopped                                

2/3 C pickling salt

6 C water

4 C Cider vinegar 

2 Tbsp mustard seed

1 tsp celery seed

3 cloves garlic, minced

2 chili peppers, minced (optional)

1/2 C fresh dill weed, chopped (4 tsp dried)


1 Combine cucumber, pepper, onion and celery with salt and water.  Let sit for 3 hours.  Drain thoroughly rinse with cold water and drain again.

 

2. Bring vinegar and remaining ingredients to a boil in a large pan.  Add chopped vegetables and return to a boil.  Reduce to a simmer and continue cooking until relish reaches desired consistency. (about 15 minutes)

 

3.  Ladle into hot pint jars, leaving 1/2 inch head space.  Process in a boiling water bath for 15 minutes.
