Devil's Food Cake
1/2 C Cocoa
1 1/3 C water, separated
1/2 C shortening (1/3 C if using Lard)
1/2 C sour cream
1 3/4 C sugar
1 Tsp vanilla
1 tsp salt
1 1/2 tsp baking soda
2 1/2 C flour
Grease and flour a 9x13 baking pan or 2, 9" round pans.
Pre-heat oven to 350º.
Bring 1/3 C water to a boil and stir in the Cocoa until well blended. Add the remaining 1 Cup of cold water and set aside until cool.
Cream shortening and sugar in the large bowl of your mixer. Add vanilla, eggs and sour cream and blend well. Add baking soda and salt.
Add flour alternately with cocoa mixture ending with flour.
Pour batter into prepared baking pans.
Bake for 40-45 minutes for 3x13 pan or 30-35 minutes for 2 round pans, or until a toothpick inserted comes out clean.
Frost with Mocha Butter Cream frosting.
