Date Balls

1 C chopped dates                     

1 C sugar                                    

1/2 C butter                               

1 beaten egg                   

2 C Rice Krispies          

1/2 C chopped pecans

1/2 tsp vanilla

powdered sugar

Note:  Buy your dates pre-chopped because they come rolled in sugar and that is important to the balance of this recipe.

In a large pan, cook dates, sugar, butter and egg over medium high heat, stirring constantly until mixture reaches soft ball stage (234°).

Note:  Grandma used to say 10 minutes from start to finish, no longer.  I discovered that only worked at her altitude.

Add Rice Krispies, pecans and vanilla, stir until mixed.

Butter your hands and roll into 1 inch balls (they are HOT!!)

Then roll in powdered sugar.

When they have cooled roll in powdered sugar again.
