Cream Cheese Cake

Crust:

1 pack Grahm Crackers, crushed

4 Tbsp butter

2½ tsp sugar

1/4 tsp cinnamon

Combine and press into a 10 inch spring form pan.  Press the crust slightly op the sides.


Filling:

18 oz Cream Cheese

1 1/8 C sugar

3 eggs

3 tsp vanilla

3/4 tsp lemon juice

Combine ingredients and beat until light and fluffy.  Pour over the crust.  Bake at 350°F for 30-40 minutes , until firm.


Topping:

1 C sour cream

3½ Tbsp Sugar

1 tsp vanilla

Combine ingredients and spread over the top of filling.  Bake an additional 10 minutes.  Cool completely.  Refrigerate at least overnight to allow flavors to mingle.


Top with prepared fruit pie filling if desired.
