Cinnamon Raisin Bars

3/4 C butter
1½ C packed brown sugar
3/4 tsp baking soda
3/4 tsp salt
2¼ C flour
2¼ C rolled oats
Cream butter and sugar. Add soda and salt, then flour until well blended. Mixture will be crumbly. By hand stir in oats and 1½ Tbsp water. Mix until crumbly. Firmly pat 1/2 of mixture into a greased 9x13 pan. Spread with raisin filling. Top with remaining crumb mixture and pat smooth. Bake in 350° oven for 35 minutes. Cool. Drizzle with Cinnamon Icing. Cut into bars.
Raisin Filling: Combine:
1/4 C sugar
1 Tbsp corn starch in a sauce pan.
Stir in
1C water
2 C raisins.
Cook over med heat until thick and bubbly. Cool.
Cinnamon Icing: Mix 1 C powdered sugar with 1/4 tsp cinnamon. Stir in enough milk, ( about 1 Tbsp) for drizzling consistency.
Variations:
Using the Raisin filling recipe; exchange raisins for any of the following:
Minced apple Craisins (dried cranberries)
Chopped dates dried apricots, chopped
Blueberries chopped cherries
Chopped strawberries crushed raspberries
Dried banana crushed blackberries
Chopped peaches
If using a very juicy fresh fruit like berries use little or no water.
Be creative, try anything that sounds good.
If you are in a hurry try canned pie filling run through a food processor for a few seconds.
Try changing the cinnamon in the icing for mace or ginger or lemon or orange peel, depending on the fruit filling that you are using.
