Chocolate Mudslide Pie
24 Chocolate Sandwich cookies, crushed
1/4 C butter, melted
4 oz melted semi sweet chocolate, (1/3 C Chips)
1 tsp instant coffee crystals
1 tsp water
3/4 C sour cream
1/2 C granulated sugar
1 tsp vanilla extract
2 C confectioners sugar
1/3 C cocoa powder
3 C heavy cream
Miniature chocolate morsels or Chocolate curls for garnish
Crush chocolate sandwich cookies a food processor until no large pieces remain. Add butter and press into pie plate. Use either parchment or wax paper, or a smaller pie plate, to press crumbs firmly and evenly.
In a small saucepan (or microwave) melt chocolate until smooth; cool 10 minutes.
In a small bowl dissolve instant coffee in water. Add sour cream, sugar and vanilla. Stir until sugar is dissolved. Blend in melted chocolate. (If chocolate hardens before it can be blended in; put entire bowl in microwave for 30 seconds and stir again.) Spread into crust and set aside.
I large mixer bowl, beat confectioners sugar, cocoa and heavy cream until stiff peaks form. Spoon mixture into a pastry bag fitted with a large star tip; pipe into pie. Sprinkle with mini morsels or chocolate curls. Refrigerate for at least 4 hours until firm.
Warning: This pie is so rich it could be called Death by Chocolate. Cut small pieces.
