Chocolate Banana Drops
2¼ C flour
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
2/3 C shortening
1 C granulated sugar
1 tsp vanilla extract
1 - 12oz pkg chocolate chips, melted
1 C mashed ripe banana
Extra Granulated Sugar for rolling Cookies
Sift together flour, baking powder, baking soda and salt, set aside.
Cream shortening, sugar, eggs and vanilla together until light and fluffy.
At low speed blend in chocolate, then flour mixture alternately with bananas. Drop by teaspoonfuls onto an ungreased cookie sheet.
Bake at 350° for 10-12 minutes.
Roll in granulated sugar while still warm. Cool.
Allow to set over night for best flavor.
Note: This cookie is fussy, many things can alter the quality. The bottoms burn easily. You may need to add flour or change baking time or temperature.
