Chicken Adobo

1 - 2½ - 3 lb Fryer Chicken, cut-up               

¼ C salad Oil                                                    

2 medium Onions                                              

2 cloves Garlic                                                

¼ C vinegar 

2 leaves star anis

½ C Soy Sauce

2 bay leaves

12 peppercorns

½ tsp Chinese 5 Spice

2 coriander seeds

1 qt. chopped tomatoes (try yellow tomatoes)

In a large skillet or wok, brown Chicken in salad oil.  Remove chicken and sauté the onions and garlic.

Return the Chicken to the pan and add all remaining ingredients.  Sometimes additional water is necessary to keep the meat immersed.

Simmer a minimum of 2 hours or as long as all day.

Note: tomatoes can be left out for brown adobo but you will need to add more water.
