Carrot Cake

2¼ C flour                                   

2 tsp cinnamon                            

½ tsp nutmeg                               

½ tsp cloves                                  

1½ tsp baking soda                     

4 eggs

3 tsp vanilla

1½C granulated sugar

1 C oil

½ tsp allspice

½ salt

1½ tsp baking powder 

Combine above ingredients in a large mixing bowl for 1 minute at medium speed.  Stir the following into the batter:

 1½ C grated carrots

 3/4 C raisins

1½ C chopped walnuts

3/4 C applesauce or crushed pineapple with it’s juice.


Pour batter into a greased 9x13 pan.  Bake at 325 degrees for 40-45 minutes.  Cool and top with Cream Cheese Frosting
